Abstract

Yak milk, due to its unique protein composition and high-value bioactive peptide potential, has become a key raw material in the development of functional foods. However, traditional enzymatic hydrolysis processes still suffer from low efficiency and insufficient purity. This study proposes a three-stage process system of composite enzymatic hydrolysis-ultrafi ltration fractionation-porous resin adsorption, achieving precise parameter control through response surface optimization.
